That’s right this is a blog about good food on a diet. Sure you’ve seen all of those diet brownies that claim to “Taste great!”. Who are they kidding? Have you ever tried a diet brownie you liked? Of course not because brownies are not supposed to be good for your diet they are supposed to be good for your soul, and that chocolate craving you just can’t kick.
But if you are going to be eating something as “unhealthy” as a brownie why not pair it with a great cup of coffee. Sure you have heard that too much coffee is not good for you, but have you ever heard that a cup a day may keep a stroke away? Now that you have this healthy cup of coffee in front of you couldn’t you use a tasty unhealthy snack? Sure most people grab a coffee cake, a cinnamon roll, but what goes better with coffee than chocolate? Nothing.
Now keep in mind if you are not a fan of chocolate, this is not a recipe for you. They are called Devil’s Brownies for a reason.
3 sticks and 2 tablespoons of unsalted butter
12 ounces bittersweet chocolate (or dark melting chocolate)
1 3/4 cups superfine (confectioner’s) sugar (also some for dusting)
1 tablespoon vanilla extract
1 1/2 cups plus 2 tablespoons of all-purpose flour
1 teaspoon salt (sounds weird but it helps bring out the sweetness of the chocolate)
1/2 cup white chocolate chips (if you’re not a fan feel free to use milk chocolate chips)
1/2 cup semisweet chocolate chips
Usually you would use a 9 x 13 pan but if you want a thicker, gooey brownie (and who doesn’t?) use a smaller pan, such as 9 x 11. Preheat your oven to 350 degrees, and start your brownies.
Melt the butter and bittersweet chocolate in double boiler, if you do not own one add two to three inches of water to a pot and place a bowl (glass is preferable) over it, keep water at a simmer. If using melting chocolate most of them have microwave directions, feel free to use them. In a bowl beat the eggs with the superfine sugar and the vanilla extract.
Let the chocolate mix cool a bit and add to the egg mixture, make sure everything is incorporated. Fold in the flour and salt, it will thicken. Once that is fully incorporated, add in both 1/2 cups of chips. After fully combined, place the brownie mixture in your pan, but do NOT forget to line it with a bit of parchment (cleaning will not be fun without it).
Bake the brownies for about 25 – 30 minutes. The top will dry and be a bit more pale and brown speckled. Allow the brownies to cool before you begin cutting. If you cut into the brownies before they will crumble and look unappetizing. Cut the brownies and sprinkle them with a little bit of confectioner’s sugar.
Now grab yourself a brownie and a nice cup of coffee, and enjoy yourself. In case you were wondering one brownie is 325 calories. Now add a 10 ounce cup of coffee, black with Splenda (or other no calorie sweetener) will only add about 5 calories.
So take a day to splurge a little and if anyone asks… you’re drinking to and for your health. Enjoy!
