Tuesday’s in the Dallas/Fort Worth area are “Biggest Loser” night (click here to view local information). Fans of the popular weight loss show gather around to see who will be the latest person to leave the ranch and head back home to the real world to continue their journey on their own. Trainers Bob and Jillian hope that all of the lessons learned during time spent in the gym as well as the kitchen will be carried on outside of the ranch. Last week’s episode would test the contestants skills in the kitchen. Each team of two were expected to prepare a dish that would be a benefit to the body and pleasing to the taste buds. Two celebrity chefs would judge the dishes prepared. Since Fort Worth is well known for the number of Mexican restaraunts (click here for listings), but can be a downfall to a weight loss program, Jen and Kaylee’s Turkey Taco Tostadas with Chipotle Yogurt Sauce, which came in second place in the judging, would be a wise choice to prepare at home when a craving this type of fare.
Turkey Taco Tostadas with Chipotle Yogurt Sauce
- 3 1/2 ounces extra lean ground turkey
- 1 tsp olive oil
- 1 corn tortilla
- 1/2 C yellow onion, diced
- 1/2 fresh jalapeno, seeded and diced
- 2 scallions, sliced
- 1/4 medium avocado, sliced in four thin slices
- 2 Tbsp fat free Greek yogurt
- Chipotle hot sauce
- 1 medium tomato, diced
- 2 Tbsp lime juice
- 1 Tbsp cilantro, chopped
Turkey Mixture: Put 1 tsp olive oil in a nonstick pan and heat over medium high heat. Add 1/4 cup of onion and saute and soft. Add the turkey and brown. Add half the amount of jalapeno and 1/2 lime juice to the skillet. Cover and keep warm.
Tortilla: Add tortilla to a dry skillet and toat on both sides until somewhat crunchy. Cut into triangles before it cools completely.
Pico De Gallo: In a bowl add diced tomato, 3/4 of the sliced scallions, remainder of onion, jalapeno, lime juice and chopped cilantro. Mix well and chill for 5 minutes.
Yogurt sauce: Place yogurt in a small bowl and add hot sauce to taste.
- Place the turkey in the center of a plate. Top with the pico de gallo, 1/2 of the yogurt sauce, scallions, and a sprinkle of cilantro. Surround the mixture with avocado slices. Place the tortilla triangles around the turkey and drizzle with the remainder of the yogurt sauce.
