Sixty chefs and cooks have collaborated to bring Denver diners who are looking to support the Colorado local economy a new regionally inspired menu. Monday they announced the creation of their new menu which will include a “Chef’s Weekly Inspirations” section along with 10 $20 wine bottle selections at Baca at the Inverness in South Denver.
The Inverness Hotel is home to five distinct dining venues with the Baca as their signature restaurant. For spring you’ll be able to choose from 18 original dishes that use Colorado’s best seasonal ingredients to create spectacular dining options for even the most discriminating of diners. If you have special food needs or sensitivities just let your server know and the kitchen will take care to prepare your vegetarian or gluten free selection.
Starting in April, guests dining in Baca can enjoy these new culinary delights to tantalize their taste buds.
- Rack of Lamb with Chorizo Hash
- Kurobuta natural pork and beans
- Truffle Mac and cheese
- Diver Scallops with Risotto.
The Inverness recently signed new partnerships with two local farms, including Verde Farms and Fruition Farms, giving the culinary team a medley of new ingredients to use, including micro-greens, sheep’s milk, local poultry and Colorado cheeses.
Baca is open 6-10pm daily with entrée plates starting at $20.
“The menu will also showcase Chef’s Weekly Inspirations, a new section that gives kitchen staff, regardless of rank, the opportunity to create 4-5 dishes to be featured on Baca’s menu. This section will give the culinary team an opportunity to leverage their global and eclectic culinary experiences to create one-of-a-kind dishes.”

The other options available at the Inverness for dining include casual pub fare at the Spotted Dog and Golf Grille to their specular Sunday brunch and Seafood buffets in Garden Terrace.
